Crepes with Tomato Sauce
with Three cows ®

Three Cows Cheese and Lurpak Butter create an irresistible flavor fusion when paired with fresh herbs, nutmeg and tangy tomato sauce.

Serves 12

Ingredients

Ingredients:
  • 1 ½ cup flour
  • 2 cups milk
  • 3 eggs, lightly beaten
  • 30 grams Lurpak Butter
 
Tomato sauce ingredients:
  • 2 tablespoons oil
  • 1 minced garlic clove
  • 400 grams canned crushed tomatoes
  • 3 tablespoons chopped parsley
 
Stuffing ingredients:
  • 400 grams Three Cows White Cheese
  • 100 grams Three Cows Mozzarella Cheese
  • Dash of ground nutmeg
  • 3 tablespoons chopped parsley
  • 2 tablespoons olive oil·          

Directions

STEP 1
Sift the flour in a bowl. Add to it a dash of salt. Make a hole in the middle of the flour and pour in the milk gradually. Mix until even. Add the eggs gradually while continuing to mix until the mixture is smooth. Cover it with a cloth and let it rest.
 
STEP 2
During that time, prepare the tomato sauce: heat the oil in a big and thick skillet. Add the garlic and fry until golden in color. Add the tomatoes, half a cup of water, salt and pepper. Let the mixture simmer on a low heat for about 30 minutes, or until the water has evaporated and the sauce is thick. Add the parsley and stir.
 
STEP 3
Heat the crepe skillet and spread it with Lurpak Butter.
 
STEP 4
Pour a quarter of the crepe mix and move the skillet around quickly to form a thin layer of crepe. Leave it until it is done (about 1 minute) or until the bottom of the crepe is golden in color. Flip it on the other side, until it is brown too, and then transfer it to a serving dish. Repeat the process until all the crepe mixture is done. Place the crepes on top of each other.
 
STEP 5
Heat the oven to 200 degrees Celsius. Spread a shallow pan with oil or Lurpak Butter.
 
STEP 6
To prepare the stuffing: mix all ingredients together and add the salt and pepper as desired.
 
STEP 7
Put 1 tablespoon of stuffing over each of the crepe, away from the edges by 1 centimeter. Fold the crepe in half, then into quarters. Arrange them in a baking dish beside each other. Bake for 20 minutes. 
Garnish
Arrange the crepes in a serving dish and garnish with parsley leaves.
