STEP 1
Melt the chocolate in a bain-marie.
STEP 2
Meanwhile, melt the sugar in the water and bring it to the boil.
STEP 3
Beat the eggs and add the sugar syrup gradually with continuous whisking. Then add the melted chocolate and the orange concentrate.
STEP 4
Let the mixture cool and then add the Puck Whipping Cream. |
Garnish Garnish with chocolate. |
