Fish Maklouba with Creamy Red Sauce

Simple and savory! This classic one-pan dish combines fresh fish, vegetables and basmati rice with a side of Kiri’s creamy pepper sauce for a flavor kick.

Serves 4

Ingredients

  • 5 Kiri squares
  • 500 grams fish filet
  • 2 onions, sliced
  • 2 tomatoes, peeled and sliced
  • 1 red pepper & 1 green pepper, sliced 
  • 1 cup basmati rice
  • Vegetable oil
  • 2 cups fish stock
  • 1 teaspoon freshly grated ginger 
  • 1 teaspoon cumin
  • 1 clove garlic, chopped
  • 1/2 teaspoon saffron
  • 1 teaspoon salt

Directions

STEP 1
Fry the onion until smooth, add sweet pepper and stir. Add tomato, cumin, saffron and ginger.

STEP 2
Fry the fish filet in oil and arrange on vegetables.

STEP 3
Mix the fish stock with Kiri squares in the mixer.

STEP 4
Wash and drain the rice, add to pan with fish and vegetables. Pour in the fish stock with Kiri squares, salt and spices, and cook for 20 minutes over medium heat.

STEP 5
For the sauce – Fry the ginger, the green and red peppers and add the tomatoes with a little stock.
 
STEP 6
Cook for 5 minutes and blend it in the mixer with Kiri squares.
 
STEP 7
Season the sauce with salt and cumin and heat it again for 5 more minutes. Serve the rice with the sauce on the side.
Garnish

 Sprinkle with fennel to add to the depth of flavor.
