Mushroom Soup
with Kiri ®

Melt-in-your-mouth good, this soup combines cheesy Kiri squares, butter and crème fraiche for irresistible richness. Mushrooms give it an earthy finish – use slices of your favorite warm bread for dipping.

Serves 4

Ingredients

  • 12 Kiri squares
  • 4 tablespoons butter
  • 1 cup of crème fraiche
  • 800 grams mixed mushrooms
  • 2 onions, finely chopped
  • 2 cloves of garlic, finely chopped
  • 6 cups of chicken stock
  • Salt and black pepper to taste

 

Directions

STEP 1
Cut the mushrooms into thin slices.

STEP 2
Fry the chopped onion and garlic in butter.
 
STEP 3
Add the sliced mushroom and season to taste with salt and freshly ground black pepper.
 
 
STEP 4
Stir in the stock and let it simmer on low heat for 30 minutes.
 
STEP 5
Blend the soup in a mixer with crème fraiche and Kiri squares, away from the fire.

STEP 6
Add the cream and heat the soup until it boils for 3 minutes.
Garnish

Serve warm slices of French bread on the side for dipping.
